Recipe: Paleo Egg Mcmuffin Breakfast

It was in the late 80’s when I got my first Mcmuffin. I remember I was about to start a trip with a group of kids that won first place in general knowledge competition in the state I was born and raised. That day was the opening of the first american fast food place. My parent went to buy me a combo for me to take on the trip. It was quite an adventure since they missed me! I departed together with another 60 kids to a expedition vacation. My dad and mom had to drive an hour to reach the school bus where I was, so yes this is how I grew up, with loving parents, steak tacos and the introduction of SAD (Standard American Diet) food. Thanks god I grew up and learned more about my meal intakes. So now I can turn this breakfast meal recipe into a healthy protein sausage and eggs with english muffin called in America McMuffin.

HEALTHY PROTEIN EGG MCMUFFIN BREAKFAST

This recipe is inspired by the famous paleo chef from Nom Nom and Mark’s daily apple. Everyone can make it in minutes, nothing fancy about it but healthy and delicious.

INGREDIENTS

2 tablespoons ghee, divided (plus more for greasing the biscuit cutters)

70g Grounded beef or turkey meat

2 large eggs

Kosher salt

Freshly ground black pepper

¼ cup water

1 avocado

1 bacon stripe

HOW TO:

In a bowl mix the salt and pepper with the grounded meat. Make 2 patties out of the meat and set aside.

Heat a skillet over medium-low heat, add the ghee, If you don’t have ghee then use coconut oil instead. Set a 9 cm biscuit cutter in the skillet. Whisk one egg and pour the egg into the cookie cutter. You can either gently scramble it with a small rubber spatula or other utensil, making sure to scrape up/pull back the bottom and let more of the raw egg hit the hot pan. Or you can let it set there. You can spice it also with salt and pepper, as you would prefer.

Add ¼ cup water to the skillet (outside of the egg molds).  and cover the skillet, turn the heat down and let it cook for 3 minutes more less.

Heat the skillet and add the patties.

When cook you can start to make the Mcmuffin sandwich.

place one egg mcmuffin as base, then add the beef patty, add some guacamole on the top, add the cook bacon, and at the end add the second egg muffin.

I never enjoyed a healthy egg mcmuffin, this recipe will keep you fit and stay away from fast food in craving times. this recipe have you covered!
