Paleo Lebkuchen

You know christmas is around the corner when you see the Lebkuchen (Xmas cookies) everywhere.

This weekend I was at Sonnentor organic shop getting my matcha, when I saw this delicious Lebkuchen! aka gingerbread cookies. They were standing next to another popular sweet called Mohn which is another speciality from a part of Austria (Waldviertel). You have to try it!!! recipe coming soon… I could resist and went straight to my fav restaurant/winery, where they have them homemade gluten free, quite expensive but worth every piece of it…

For that reason I decide to try the Paleo recipe, I thought it should be that difficult, and it isn’t. In the other hand, it is fun, healthy & yummy.

I really love this Paleo Lebkuchen (Xmas cookies) I think I am just in love with the masala spices 🙂

COOKIE INGREDIENTS

1) 4 Tbs Raw honey

2) 1½ Tbs Raw milk butter or Coconut oil

3) 175 g Walnut flour (grounded walnuts)

4) 1 Egg

5) ½ tbs Backing powder, ½ tbs Ginger powder, 1 Tbs Cinnamon powder, ½ Tbs Clove powder, ¼ Tbs Nutmeg powder

1 Pinch of see salt

GLAZE INGREDIENTS

¼ cup coconut oil (liquid)

¼ tbs almond extract

1 tbs vanilla extract or powder

1Tbs maple syrup

1 Tbs raw honey

COOKIE INSTRUCTIONS

Preheat oven 180°C.

Mix in a bowl the flour with all the spices and salt, in another bowl mix the egg with the honey.

Mix everything together and leave it on the fridge for 30 minutes.

After that, make the sizes of your Paleo Lebkuchen and the form you would like to have. It might serve for 6-8 cookies…Place them in a grease cookie sheet or on a backing paper.

Back it for about 15 minutes. And you are done!!!! You can eat your paleo Lebkuchen cookies after letting them cool for a while or..you can go ahead and  prepare the glaze ;)…if this is the case you might put back your paleo lebkuchen cookies to the fridge because you need them really cold for the glaze…yumm…

GLAZE INSTRUCTIONS

Beat the coconut oil until fluffy. Add remaining ingredients and beat until fully incorporated.

Spread some glaze on each Paleo Lebkuchen cookie, then keep them in the refrigerator until ready to serve.

Note: The glaze stays yummy and hard as long as the cookies are cold.

P.D. If you are not in the mood to make the glaze, then just go the your closest organic store and get the “Oblaten”, baking wafers, of course gluten free…
