My favorite gluten free protein pancakes recipe

After trying with several recipes and several gluten free flours I finally came up with my favorite recipe for making the most delicious and quick pancakes. And I am sharing it with you! Back in my home country I had a tradition for pancakes, I will get up every Sunday and would have prepared normal pancakes from a ready hotcake box from an american famous brand. My family in the other hand will prepare some brunch Barbacoa tacos. We would meet in the middle and ended up all chatting in the kitchen table.

Since my summer Capoeira camp I tried the oatmeal as a porridge with fruits, then back at home I tried the oatmeals for my protein smoothie recipe and then I wanted to try it with pancakes. I have to tell you the first time came up tasteless and a bit boring flat. After mixing here and there almond flour, coconut flour and oatmeal flour I finally made it work for our taste. My husband, K’uno the dog and I.

Since normally my breakfast would consist of 2 eggs and one steak and I try to change a little and go meatless Monday or eat less animal products I tried with different product like almond milk and rice milk as well. I will share with the recipe with vegan option. So here we go, all you need is the following:

PROTEIN GLUTEN FREE PANCAKES

1 Tsp. hemp protein

1 tsp. mix spice of cardamon, cinnamon and vanilla

1 cup oatmeal flour (I do with with my vitamix)

1 cup raw milk

2 eggs

1 banana

Raw butter

HOW TO

Mix all ingredients and preheat the skillet, turn once and enjoy with extra raw honey and blueberries.

VEGAN PROTEIN GLUTEN FREE PANCAKES

1 Tsp. hemp protein

1 tsp. mix spice of cardamon, cinnamon and vanilla

1 cup oatmeal flour (I do with with my vitamix)

1 1/2 cup ALMOND milk

2 banana

Vegan caramel to make it sweeter

HOW TO
