Gazpacho Soup: Raw or Paleo, your choice ;)

Gazpacho soup today is going to be tasty raw un cook soup. Easy to make and super easy to get the ingredients. Tomatoes, cucumber and avocado are the main ingredients.

RAW RECIPE:

Ingredients

2 large tomatoes

½ large cucumber

1/3 cup basil, packed

¼ tsp salt

Juice of half a lime

2 tbsp apple cider vinegar

1/8 large avocado

1/3 cup water

3 tbsp olive oil

Instructions:

Blend all together and add organic olive oil and water depending of your taste if you prefer it creamy or watery 😉 Garnish with avo slices or zucchini.

PALEO RECIPE:

Ingredients:

8 tomatoes

1 small red onion, peeled and chopped

1 cucumber, peeled

1 small green pepper and 1 small red pepper chopped

3 garlic cloves

1 long red chili

1 orange, take the juice and a bit zest

2 tbsp apple cider

3/4 cup olive oil

1 cup tomato juice

1 tsp salt & pepper

Instructions:

Place tomatoes in boiling water until their skin crack. Remove & rinse under cold water. Peel the skin off & cut into cubes, remove the seeds.

Peel the cucumber and cut it in half going lengthways. Using a spoon remove seeds. Roughly cut the veggies.

Process all ingredients in a blender or food processor until smooth consistency.

Then add olive oil, vinegar, orange juice, salt & pepper for taste. Remember if you prefer creamy or watery just add or not more water…

You can eat it right away of can cool it on the fridge to later serve it.
